Christmas Chocolate chip shortbread

Ingredients:

  • 6oz plain flour
  • 4 oz butter
  • 2oz caster sugar
  • 20z chocolate chips – any variety

Cream butter and sugar together with a wooden spoon
Add plain flour and knead it together to form a dough
Just before the dough sticks together, add the chocolate chips, and knead into a ball.

Roll the dough out to approx ¾ - 1cm thick

Cut the biscuits into shapes – because it’s nearly Christmas, we used Christmas shapes!

Bake in a medium oven for 15-20mins until the biscuits are a pale colour.

 

Making a Cake in a Mug in the Microwave

This recipe makes enough mixture for one massively huge mug (two or three ordinary sized mugs).

  • 4 tablespoons - self raising flour
  • 4 tablespoons - sugar
  • 2 tablespoons - drinking chocolate
  • 3 tablespoons - vegetable oil
  • 3 tablespoons - milk
  • 1 egg
  • a few chocolate drops

Mix very well. Either mix in your huge mug or use a bowl and then put the mixture into your mugs. Don’t forget that the mixture will rise as it cooks. Zap in the microwave until risen and cooked (a couple of minutes), exact cooking time will vary.  Best eaten whilst still warm.
